BANANA OATMEAL COOKIES
1/2 cup unsalted butterat room temperature
1 cup packed light brown sugar
1 large egg
1 1/2 tsp pure vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 tsp salt
2 teaspoons ground cinnamon
In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using an electric mixer, beat the sugar and butter until light and fluffy, about 3 minutes.
Scrape down the sides of the bowl and then mix in the egg until completely incorporated. Scrape down the sides of the bowl again and add the skillet and vanilla.
In a medium bowl, whisk together the flour, baking soda, salt and cinnamon.
Gradually add the the flour mixture to the banana mixture and mix until just combined.
Scrape the sides of the bowl and stir to recombine.
Use a medium cookie scoop (about 1.5 tbsp ) to scoop the dough on prepared cookie sheets leaving about 2 inches between each cookie.
Bake in preheated oven for about 9-11 minutes.
Remove cookies from the oven and gently press on the shirts of each cookie with the bottom of a drinking glass. Because these cookies don't spread much, this can help give them a traditional cookie form.
